Creamy Tomato Risotto

Ingredients
- • 2 tablespoons olive oil
- • 1 small onion, chopped
- • 2 cloves garlic, minced
- • 1 cup Arborio rice
- • 1 jar Pure Harvest Cherry Tomato Passata
- • 4 cups vegetable or chicken broth
- • 1/2 cup grated Parmesan cheese
- • Salt and pepper to taste
- • Fresh basil for garnishing
Method
1. Sauté
In a pan, heat olive oil, add chopped onion, and cook until soft. Stir in minced garlic for 1 minute.
2. Add Rice
Stir in Arborio rice and sauté for 2-3 minutes.
3. Incorporate Passata
Mix in 1 jar of Cherry Tomato Passata and gradually add warm broth, one ladle at a time, stirring frequently until absorbed (about 18-20 minutes).
4. Finish
Remove from heat, stir in Parmesan cheese and season with salt and pepper.
5. Serve
Garnish with fresh basil.
